Garlic, or Allium sativum, is a bulbous plant belonging to the Amaryllidaceae family. Native to Central Asia, garlic is widely cultivated and appreciated worldwide for its edible bulbs with multiple cloves. The plant grows from small bulbs called cloves, which develop underground. Garlic leaves are long and narrow, and its central stem produces a spherical inflorescence called an “umbel” containing numerous white flowers.

The use of garlic in cooking dates back 5,000 years. As an anecdote, Roman soldiers carried garlic during their military campaigns, while Greek athletes consumed it in large quantities, as the plant was recognized for its strengthening properties. The oldest known recipe from these ancient times, dating back to Mesopotamia, includes garlic.
