Semi-nomadic Vez fishermen lived in this place for a long time in symbiosis with the lagoon. Unfortunately, as the traditional resources of these nomads dwindled, they turned towards salt mining, another sea treasure. This nectar of salt marshes, fleur de sel, is white and pure. It is the fruit of the delicate work of artisans and the ideal climatic conditions in Madagascar. It is formed on the surface of clay ponds when the sun and wind evaporates water on the surface of the ponds. The quality of ‘Fleur de sel’ depends on the method of harvesting and maintenance during the drying and storage period. In Ifati, these crystals are removed, or rather assembled, by hand.
