Zathar is a spice blend from the city of Byblos in Lebanon, one of the oldest cities in the world, founded around 5000 BC. Byblos engaged in extensive trade with Egypt around the 3rd millennium BC, exporting cedar wood for shipbuilding, resin for mummification, wine, and papyrus. The Phoenician city was an inevitable economic, political, and cultural crossroads. When Alexander the Great arrived, he changed its Semitic name “Gebal” to “Byblos” from the Greek word “biblion,” meaning scroll, due to the papyrus scrolls exported from Byblos. Hence, the name of the Bible also derives from here.

Zathar is widely used in Lebanon, Syria, and throughout the Mediterranean region. It is made from three ingredients typical of the Middle East: sesame, thyme, and sumac, and traditionally eaten as mezze with bread dipped in olive oil and then in zathar.

Its tangy, aromatic, and slightly salty flavor also pairs well with white meat and poultry. Why not try adding it to marinades? Its lemony warmth will enhance fish dishes as well.

Ingredients:
Thyme, white sesame, golden sesame, thyme, salt. May contain traces of mustard, celery, or gluten.
