White Voatsiperifery peppers come from the Piperaceae family. The name of these peppers comes from ‘voa’, which means fruit, and ‘tsiperifery’ from the name of the plant of Madagascar (Piper borbonense). In the south-east of Madagascar, these wild peppers are harvested only from young shoots, from June to August.
It is best to use ground just before serving to preserve aromas and flavors. Be careful not to fry these peppers for too long as they become particularly bitter.
Peppers stored in the wrong conditions can lose their flavor, so keep them in a cool, dry place, away from direct sunlight.
