Oregano is one of the most widely used herbs in Mediterranean cuisine. There are about thirty oregano species growing in Europe, all of which are harvested in the summer. The upper part of the stem with leaves and flowers is used. The fresh and strong aromas of oregano go well with pizzas, pasta, risotto, fried potatoes, vegetable soups, fish or salads. Delicious with Mediterranean dishes using tomatoes, mozzarella and olive oil. This spice is especially suitable for pickling cucumbers, pickling zucchini, canning tomatoes and peppers. Like basil, oregano can be flavored with vinegar and oil. They also go well with olives and capers.
