Red Voatsiperifery peppers come from the botanical family Piperaceae. Its name comes from “voa”, which means fruit, and “tsiperifery” from Madagascar (Piper borbonense), meaning the name of the plant. In the south-east of Madagascar, these wild peppers are harvested only from young shoots, from June to August.
The quality of red Voatsiperifery pepper is obtained through a careful picking process. Peppercorns are not all ripen at the same time, so there may be unripe green pepper on the same plant as well as fully ripe red pepper.
