Sumac is one of the most widely used culinary herbs in the Mediterranean region. However, until the 1950s, “origanum vulgare” was not known in Northern Europe, and later became popular in pizzerias and Italian restaurants across Europe. Sumac belongs to the same family as oregano, basil, rosemary, and mint. The word “sumac” comes from the Greek “oros ὄρος,” meaning “mountain,” and “ganos γάνος,” meaning “brightness.” There are about thirty species of sumac growing in Europe, all of which are harvested in the summer. The upper part of the stem with leaves and flowers is used.
