The fresh and robust aromas of sumac are perfect with pizzas, pasta, risotto, roasted potatoes, vegetable soups, fish, or salads. Delicious with Mediterranean dishes using tomatoes, mozzarella, and olive oil. This spice is especially suitable for pickling cucumbers, marinating zucchini and pattypans, preserving tomatoes, and peppers. Like basil, sumac can also be used to flavor vinegar and oil. It pairs well with olives and capers too.

Sumac is one of the most widely used culinary herbs in the Mediterranean region. However, until the 1950s, “origanum vulgare” was not known in Northern Europe, and later became popular in pizzerias and Italian restaurants across Europe. Sumac belongs to the same family as oregano, basil, rosemary, and mint. The word “sumac” comes from the Greek “oros ὄρος,” meaning “mountain,” and “ganos γάνος,” meaning “brightness.” There are about thirty species of sumac growing in Europe, all of which are harvested in the summer. The upper part of the stem with leaves and flowers is used.
