Although cocoa beans, known as nahuatl or cac-hualt to the Maya, were considered a sacred food, the Aztecs used them as currency. They were the first to discover this brown gold in Latin America, before European explorers introduced cocoa beans to Europe and the rest of the world. Then, all European kings and nobles went crazy for cocoa, but now cocoa is available to everyone…
As the home of cocoa beans, it’s no wonder that Mexican cuisine is rich in chocolate recipes, including the famous Mole poblano. Legend has it that this traditional Mexican dish was invented at the Santa Clara convent… When Archbishop Juan de Palafox unexpectedly visited, the nuns put together all the ingredients they had to prepare this dish. Chocolate, spicy peppers, peanuts, and even turkey! Thus, the symbolic Mexican dish was born.
