Brown cane sugar is produced by partially refining the liquid extracted from sugar cane. This sugar contains 5% molasses, which gives the sugar a light shade and a delicate vanilla aroma. After harvesting, the cane is pressed until the liquid from which the cane sugar is made is extracted. This liquid is then evaporated to a thick consistency in which sugar accumulates and crystallizes.
