Wasabi is what we can call a Japanese mustard. Both spicy and fresh, powdered wasabi is ideal for enhancing your preparations.

Wasabi is an entirely edible plant, meaning that it is possible to consume both the rhizome, leaves, and flowers. There are two types of wasabi, “sawa wasabi” which is cultivated in a semi-aquatic environment and “oka wasabi” whose quality is less important. Oka wasabi is cultivated in open fields. Wasabi is therefore a plant that grows in the water of streams at the foot of Japanese mountains only.

 

In spring, the buds bloom, and it is at this point that the root is ready to be harvested. When the rhizome is fresh, it is grated to obtain a paste, the leaves are crushed and then dried to obtain powder, and the flowers are used in fresh or dried cooking. Wasabi rhizome is extremely expensive, which is why few people have ever tasted real wasabi. In fact, in reality in the West, we make an amalgam, what we call “wasabi” is actually a mixture of horseradish powder and mustard.

Gradually, this paste made its way to our continents much to the delight of our taste buds!
