Pink peppers or pink berries come from the island of Réunion. The pink berry was known as “Bourbon Pepper” in the 17th century because it was grown on the island of Réunion, which at the time was called “Bourbon”. These berries, native to Madagascar, are the fruit of the plant Schinus terebinthifolia. They have a sweet but slightly peppery taste. The berries are graded by local Malgaas women. Only fully ripe berries are picked for their strong aromatic taste.
Pink berries are also grown on the island of Réunion, Peru, New Caledonia, South Africa and Brazil.
Gently crush the pink berries between your fingers to release notes of vegetables, coriander and burnt juniper and sprinkle them on your dishes just before serving. The pink berries have a soft texture, a slightly bitter and woody taste.
Perfect with marinated salmon, boiled fish, white asparagus and goat cheese.
