Spirulina is a microscopic spiral-shaped algae (Arthrospira platensis) used as a dietary supplement. It is used for health benefits and for its mild and delicate taste, similar to green tea.
Sprinkle a teaspoon on fresh vegetables, vegetable soup, fish dishes, fresh goat cheese, cocktail or fruit juice. Avoid boiling spirulina as it can destroy the nutritional benefits.
Spirulina was a daily part of the Aztec diet until the 16th century. In his memoirs, Spanish conquistador Hernan Cortes described how the Indians met: “He pulled green mud from the lakes, dried it in the sun, and then ate it as a tortilla.”
