“Domaine d’Uby“ harvests its grapes only when they are fully ripe to produce concentrated wines full of fruity and floral aromas. The grapes are harvested at night and protected by carbon dioxide snow to prevent oxidation. In the Uby cellar, the grapes are macerated, pneumatically pressed, fermented at low temperatures and matured on fine lees.
